Gluten & Dairy Free Pancakes


Not Just for Pancake Day

I love pancakes, so I really love pancake day!

Not that I wait a whole year to enjoys these, but it’s a damn good reason to eat more!

Just because I don’t have wheat and dairy in my diet, dosn’t mean I need to go without and neither should you.

  •  4 eggs
  • 1/2 cup coconut flour
  • 1 cup coconut milk
  • 2 teaspoon vanilla extract
  • 1 teaspoon Gluten free baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • stevia (optional)
  • Coconut Oil (for frying)


Combine all ingredients and stir until thoroughly combined.

If you have a hand blender, use it!

Heat a greased non-stick skillet over medium high heat for a minute or two. (You want the pan to be completely pre-heated so the first pancakes cooks correctly.)

Pour desired amount of batter onto skillet (I used two tablespoons to make medium-sized pancakes), and cook until golden, a few minutes on each side.

Transfer to a plate and repeat with remaining batter, re-greasing with coconut oil between each pancake. Just a small amount of coconut oil is required and they are better the less you can get away with.

Top with either: maple syrup, organic honey, fresh lemon, berries or agave and devour!
